Herbed Cherry Tomoatoes

2 pints cherry or grape tomatoes
1 tsp. olive oil
2 garlic cloves, minced
1 tsp sugar
1 Tbls. chopped fresh basil or 3/4 tsp. dried
1 tsp. chopped fresh oregano, or 1/4 tsp dried
1 tsp. chopped fresh rosemary, or 1/4 tsp dried
1/2 tsp. chopped fresh thyme, or 1/8 tsp dried
3/4 tsp. salt
1/4 tsp freshly ground pepper
Optional: sliced zucchini or smoked salmon tossed in.

  1. Preheat oven to 400 degrees and spray a shallow roasting pan or jelly-roll pan with nonstick spray.
  2. Combine the tomatoes and oil in a large bowl: toss well.  Spray lightly with nonstick spray and toss to coat.  Add the garlic, sugar, basil, oregano, rosemary, thyme, salt, and pepper.  Transfer to the roasting pan.
  3. Roast until the tomatoes just begin to soften and crack, 8-10 minutes.

Per serving (3/4 cup):  56 calories

2g total fat, 0g saturated fat, 0mg cholesterol, 453 mg sodium, 10g total carbohydrate, 2g dietary fiber, 2g protein, 16mg calcium.
